These are the words of Nicola, the Al Lago chef who is dedicated to his great passion with enthusiasm, curiosity and desire to experiment with new combinations of flavours. His love for cooking blossomed at an early age, helping in the kitchen of his father Fiorenzo, who now runs a farm. Our chef selects organic and farm-to-table products grown by his father, to create imaginative dishes as well as the delicious recipes of the Val di Fassa tradition such as the Bale da Formai: delicious canederli with Cuor di Fassa cheese - produced with the milk of dad’s operation- in the Pera di Fassa dairy.
